A Fresh Perspective

I’ve had this wine at various tastings and got so used to seeing it that I didn’t fully appreciate it. It’s not that I didn’t like it—I enjoyed it just as much as the other featured wines. Sometimes, though, I opted for others since I preferred not to drink as much at the time. Plus, this was during a period when I decided to explore Sancerres.

Anywho, time passed, and I decided to open a bottle while cooking salmon in March, and it was an absolute revelation. Whether it was the time away or the perfect pairing, this Rosé was exceptional. It’s crisp with a delightful aroma—dry, not overly fruity, but with a subtle hint of fruit and a pronounced mineral quality which lingered after finishing lunch.

Falling for Gordon Springs, All Over Again.

As with most Rosés, it’s best enjoyed chilled on a hot day. This happened to be one of those days. I found myself gazing from my balcony at the beautiful beach while savoring this delightful pairing. This wine also has a refreshing touch of citrus that complements its pleasant aromas. I mean it when I say that the wine paired beautifully with my salmon, rice, quinoa, and light veggie mix. I was actually pleased that I hadn’t used many spices in my dish. This allowed the wine and food to complement each other’s flavors beautifully.

After finishing the bottle and realizing I had no more, I frantically searched for it online. Unfortunately, I couldn’t find it anywhere. After a brief period of mourning, I was very happily surprised when someone managed to find it again at the shop across a few months later.

When it was brought, my next words were, ‘Oh my God, is there more?’ I was ecstatic to see the Gordonne Springs Rosé again. He let me know that it was the last one, and of course, I’ve been in this exact situation before.

I rushed to the shop just in case they had more in the back, but unfortunately, they had already sold the rest. Well, I still have that bottle in my fridge and am eagerly contemplating the best moment to savor this delightful gem once more. All this to say, if you ever come across this little gem, save it for the right occasion. And make sure you get it really chilled before you do.
